Chef Mark's baked goods are created with all natural ingredients like butter, cream, eggs, real vanilla, fresh fruit, locally sourced herbs, and high quality flour. All of the recipes have been lovingly refined to ensure only the best product is produced for your family or event.

Mark Bridge, also known as Cookie, is Escoffier trained, a state registered Cottage Baker as well as a certified food manager. Mark has extensive experience in the restaurant industry, including Perkins Restaurants and Bakeries. Baking has been a lifelong obsession (especially the consuming part). A current project has Mark acting as baker for the National Park Service, Grant - Kohrs Ranch National Historical Site to contemporize the handwritten recipes of Augusta Kohrs. He even serves as an instructor and provides classes in artisan bread, baking, sourdough and Dutch oven baking. He enjoys baking competitions and his pies, and other treats are regular award winners.
You may have seen him talking about chuck wagon history on the television show Common Ground or preparing a Dutch oven meal on Chef In The House. As a Legacy Artist he tours and performs Victorian music with his Historical Notes program. Mark is also an antique dealer and specializes in culinary antiques. A pie baking contest now and then can be fun and an opportunity to try out new recipes. Pies have been entered in both double and single crust categories with the following results from the last six competitions.

The county fair can be fun too with Open Class entries garnering a Grand Champion win for Swedish Limpa Rye
Bread, and 1st and 2nd place ribbons for Espresso White Chocolate Chip Cookies, Bread and Butter Pickles, Sourdough Bread, Gluten Free Brownies, Strawberry Jam, Whole Wheat Buns.
